I am not a chef, nor do I play one on t.v. But my children insist that I feed them, and I insist that it be somewhat healthy. I have a rotation of about 8 basic dinners we cycle through and this is our latest addition to that cycle. It’s born out of a need to use our leftover quinoa from our broccoli quinoa casserole we had the night before (I’ll share that recipe next time). I literally just started throwing everything I could think of in a pan, and this is the result. My kids loved it. Their friends who were at the house stayed for dinner and loved it, too. So, here it is.
2 cans corn (drained and rinsed)
2 cans black beans (drained and rinsed)
2 cans diced tomatoes
2 cups of cooked quinoa (or however much is leftover in the fridge)
2 cans of Costco chicken (you could use rotisserie chicken or any leftovers you have, too)
1 packet taco seasoning
2 tbsp lime juice
Combine everything in a large skillet. Cook until it’s hot (very technical, I know)
Spoon into a bowl lined with a tortilla shell (or not). Add guacamole and/or sour cream on the side and cheese on top (or not). Enjoy!
